Pasta with spinach pesto

Ingredients:

  • Pasta /Макароны (Noodles, spaghetti) — 200 g;
  • Spinach (fresh) — 300 g;

To make spinach pesto, you will need the following ingredients and steps:

  1. Rinse the spinach, cover with boiling water, season with salt, and cook for 2 minutes. Then drain and rinse with cold water.
  2. Toast the pine nuts in a dry frying pan. Remove and chop them.
  3. Finely chop the garlic and fry it in 2 tablespoons of olive oil (do not overcook it!).
  4. Remove from heat.
  5. Combine the nuts and garlic.
  6. Add 2 tablespoons of olive oil to 2 tablespoons of Parmesan cheese.
  7. Combine the cheese with the nuts and garlic.
  8. Puree the cooled and drained spinach in a blender.
  9. Combine the spinach with the cheese and nut mixture. Season with salt and pepper to taste. You can add lemon juice if the pesto seems too bland.
  10. Cook the pasta according to package instructions.
  11. Serve the spinach pesto with the pasta. Stir thoroughly before serving!
