In southern Italy, they are used to prepare passata sauce, which is one of the most commonly used additions to main dishes. Federici whole pilled tomatoes are produced only from selected tomatoes that have reached the peak of their ripeness and flavor.

They are often used for cooking tomato and vegetable soups, sauces and gravies. The absence of the skin gives them uniformity and additional sweetness.
